We had an impromptu BBQ the other night, which gave me the perfect opportunity to try out this new recipe I found on Pinterest. I modified the original to suit the tastes of our dinner guests, and the salad was a big hit!
Ingredients:
2 15oz cans black beans, drained and rinsed
1 bag frozen corn, thawed
1 tomato, chopped
1/2 a red onion, chopped
1 lime, juice of
3/8 cup extra virgin olive oil
2 Tbsp Italian seasoning
Salt and pepper
Directions:
Mix together beans, corn, tomato, red onion and spices. Mix in juice and olive oil. Let marinate in refrigerator at least 30 minutes. Enjoy
